For many years, the UC Davis Grounds Keepers disposed of the olive crop that fell from the olive trees each year. Under Maurice Hollman, Associate Vice Chancellor for Campus Operations and Maintenance, the university began to harvest these olives to make olive oil. Grown without irrigation and harvested by hand and machine, UC Davis Olive Oil is a pure, fruity and fresh extra virgin olive oil which can be enjoyed with a variety of foods.
