Let’s kick off Picnic Day together! 

Join the Cal Aggie Alumni Association for our annual virtual Picnic Day pancake breakfast! This family friendly virtual event will feature live cooking demonstrations given by our talented alumni chefs and tips on how to make the best pancakes from the comfort of your own home. Also featuring a special guest appearance from Professor of Chemical Engineering and Director fo the UC Davis Coffee Center, Bill Ristenpart '99, who will instruct us on how to brew the best cup of coffee! 

Once breakfast is ready we will head to the livestreamed Picnic Day parade where you can watch the parade!

Below are the ingredients and suggested steps to prepare the night before the demonstration to help save time during the live demo: 

Equipment/Utensils

  • Bowls: Large and Medium
  • Grater
  • 1 Griddle or 1 Medium Non-stick Pan
  • 1 Waffle Iron
  • Measuring Cups:
    • 1/4 cup 
    • 1/3 cup 
    • 1/2 cup 
  • Measuring Spoons: 
    • 2 Tbsp
    • 1 tsp
    • 1/2 tsp
    • 1/4 tsp 
  • Whisk/Fork
  • Spatula 

 

Potato Pancakes

  • Source: All Recipes
  • Yield: 6 servings
  • Ingredients
    • Wet:
      • 4 Large Potatoes
      • 1 Yellow Onion
      • 1 Egg, beaten
      • 1-2 Cups Vegetable Oil (for frying)
    • Dry:
      • 2 Tbsp. All-Purpose Flour
      • 1 tsp Salt
      • 1/2 tsp Ground Black Pepper
  • Suggested Prep Step: Grate Potato and Onion into a Large Bowl, then drain excess liquid

 

Buttermilk Pancakes

  • Source: Food Network (Bobby Flay)
  • Yield: Approximately nine to ten 4 ½-5” pancakes
  • Ingredients
    • Wet:
      • 2 Eggs
      • 1 ½ Cups of Buttermilk - suggested prep step: combine and store in a bowl/measuring cup, cover, then store in the fridge until ready for use
        • 1 ½ Cups of Cow OR Soy OR Oat Milk
        • 1 ½ Tbsp. Balsamic Vinegar (recommended for ideal flavor). Alternative would be White Vinegar3 Tbsp. Vegetable Oil OR cooled, melted Butte
      • 3 Tbsp. Vegetable Oil OR cooled, melted Butter
      • 2 Tbsp. Honey OR Maple Syrup
      • 2 tsp. Vanilla Extract OR Vanilla Paste (either is delightful, but the paste adds a little extra sweetness)
      • 1 can of Cooking Oil Spray
    • Dry: suggested to sift each ingredient, combine into a bowl the night before, cover, and store at room temperature
      • 1 ¾ Cups All-Purpose (“AP”) Flour
      • 2 ¼ tsp. Baking Powder
      • ¼ tsp. Salt 

 

Buttermilk Waffles

  • Source: Food Network (Bobby Flay)
  • Yield: Approximately 4 servings (16 quarter pieces)
  • Ingredients: 
    • Wet​​​​​​​
      • 3 eggs 
      •  1 ½ Cups of Buttermilk - suggested prep step: combine and stir in a bowl/measuring cup, cover, then store in fridge until ready for use:
        • 1 ½ Cups of Cow OR Soy OR Oat Milk
        • 1 ½ Tbsp. Balsamic Vinegar (recommended for ideal flavor). Alternative would be White Vinegar
      • 1 stick (8 Tbsp.) Unsalted Butter, melted and cooled
      • 1 can of Cooking Oil Spray
    • Dry: suggested to sift each ingredient and combine the night before​​​​​​​
      • 1 ¾ Cups All-Purpose (“AP”) Flour
      • 3 Tbsp. Sugar
      • 2 tsp. Baking Powder
      • ¼ tsp Baking Soda
      • 1/2 tsp. Fine Salt
